Pandesal - Rolls

I made a PANDESAL and oh, boy! it was scrumptious and with a butter on it. . .uhmmmm . . uhmmm . My hubby is fond of cooking and modifying recipes. He hooked me up with the cooking thing, peaking my interest to learn. Oh, yea, I learn some quite a bit and that surprised him. I love to share this recipe and it is not hard to do . .. in fact, it is very easy and quick once you are motivated to do it. I attached the photo of the PANDESAL I made . . .it is very inviting. I’ve been trying this many times till I got the perfect taste… my husband love this rolls and he bring them to work for snacks. Hope you all like it too as much as I do. This is just so easy. Try it and you will know. It just takes courage and motivation.

2 large whole egg, room temperature
1 large egg yolk, room temperature
2 ounces sugar, approximately 1/4 cup ( if you want a little sweet on your pandesal make it 1/2 cup)
3 ounces unsalted butter, melted, approximately 6 tablespoons ( any brand)
1 cup skim milk, room temperature ( or you can use 1/2 cup regular milk and 1/2 cup water, if you like more tastes on it.)
20 ounces all-purpose flour, approximately 4 cups
3 teaspoons active dry yeast
1 1/4 teaspoons kosher salt
Vegetable oil or cooking spray
Breadcrumbs ( I use regular ritz crackers for my crumbs… crush it with kneeding bread.)
Microwave the milk on high for 1 minute.
Run hot water on the egg for about 1 minute.
In a bowl of a stand mixer with the whisk attachment, whisk the egg yolk, whole eggs, sugar, butter and milk. Add 2 cups of the flour along with the yeast and salt; whisk until moistened and combined.
Remove the whisk attachment and replace with a dough hook. Add all cup of the remaining flour and knead on low speed for 5 minutes. Check the consistency of the dough; the dough should feel soft and moist but not sticky. Knead on low speed 5 minutes more or until the dough clears the sides of the bowl. Turn the dough out onto a lightly floured work surface; Knead by hand about 30 seconds. Lightly oil a large bowl or spray it with cooking spray. Transfer the dough to the bowl, lightly spray the top of the dough, cover and let it double the volume, 2 to 2 1/2 hours.
Spray a baking sheet. Turn the dough out onto a lightly floured work surface. Gently deflate dough with your fist, then divide the dough to your desired size; you can make it to 20-24 and roll them in the breadcrumbs.
Preheat the oven 375 degrees F. And bake it for 15-20 minutes or until the tops are golden brown.
